It’s January and it’s cold. Eating a salad while craving comfort food does not sound very fun. Luckily this dish will hit the spot without the guilt. A big bowl of Quinoa Fried Rice Recipe is delicious, healthy and comforting.
I personally love Chinese takeout. The seasonings, the textures, and even the cute cardboard containers bring a smile to my face. When I was little, my parents used to order it every Sunday for lunch. They still hold that tradition in Venezuela so when I go there and visit, I eat Chinese every Sunday.

If you have 10 spare minutes and some cooked Quinoa in the fridge you got yourself a delicious side dish. Add some cooked chicken, shrimp, beef or pork and make it an entree. You can also add some leftover veggies or any kind of veggie/protein combination you may like.
Since I make Quinoa at home as a rice replacement, there’s always a big bowl in the fridge. The secret to fried rice is to use day old rice or Quinoa. If you make it with a fresh batch, the rice/Quinoa will turn mushy and have the consistency of sushi rice instead of fried rice.
There’s no special tools or wok required to make this Quinoa Fried Rice Recipe. Simply use a regular old wide mouth skillet and you’re good to go. The flavor and texture are spot on, so even the pickiest eaters will love this one!

- 2 Cups of Cooked Day Old Quinoa*
- 1/2 Teaspoon of minced Ginger
- 1 Medium Carrot minced
- 1/4 Onion minced
- 1/2 Cup of frozen peas
- 2 Eggs
- 1 Tablespoon plus 1 teaspoon Sesame Oil
- 1 Tablespoon of Soy Sauce
Scramble the 2 eggs into a bowl
Using a skillet, heat 1 teaspoon of sesame oil over medium high heat
Add the scrambled eggs and let them cook. Remove from heat and chop them in pieces
Pour the remaining 1 tablespoon of oil over medium heat and cook the onions, carrots, and ginger for 2-3 minutes
Add the cooked Quinoa and stir until combined. Add the soy sauce and mix everything together. Add the cooked eggs
Add the frozen peas and cook one minute more until the peas are heated through
Cool in the fridge.
